Nghe Cakes are made by using glutinious powder kneaded dough and stretch thinly to make cover. Then well-cooked bean, sesame and sugar are used to make the almond. When the almond is put into the cake cover, twist once to make the foot of the cake and drop to boil in a pot with boiling water. When the cakes get done, they float on the surface of the water. Use a ladle to pick them out. The cake can also be wrapped in banana leaves to cook. Nghe Cakes can be kept for eating during three days of the festival without being stale. |
